Dedicated fryers: Locals Oyster Bar

The most beloved American side is naturally gluten-free, a delicious salty side for nearly any meal. While my Irish heritage may influence my love of potatoes I’m not alone; an average American eats about 29 pounds of fries every year.
Just because fries are made without gluten, doesn’t mean they are 100% gluten-free. If you use the same fryer and oil to fry your onion rings, hushpuppies, or pickles it’s no longer a gluten-free side.

Similar to a shellfish allergy, a gluten reaction can occur from ingesting food that has come into contact with the irritant (breadcrumbs, pasta, etc). Also like a food allergy, hot temperatures can’t “burn” the gluten off.
Since we cannot remove the gluten once it has been in contact with the food, then in order to serve gluten-free food safely, it needs to remain out of contact with gluten during the entire food process. In order to safely fry gluten-free food, it must be done in a gluten-free dedicated fryer.
The best experience I have had with a separate fryer recently was at Locals Oyster Bar located inside Transfer Co. Food hall.

You can imagine my delight when I found a seafood place close to home who confirmed they do have a gluten-free fryer. Local’s Oyster Bar in Raleigh has multiple fryers and one is saved for gluten-free fries plus any fish you want fried in gluten-free Panko crumbs!
Tucked away in the back corner sits Local’s. While I’m not a huge oyster fan personally, I do love shrimp! When I spoke with the waitstaff, they clarified that anything on the menu could be breaded with gluten-free Panko crumbs and fried in their dedicated gluten-free fryer. I was ecstatic to know I could have not only those french fries but crispy shrimp!
